Spiced Nuts

You can use whatever combination of nuts you like, and also any combination of flavours you like. Here I have used flavours that I incorporate into a Mexican chilli dish that I love.

This nut mix can be served with drinks or just as a snack, but it is also fantastic sprinkled over salads.

Cook Time 30 minutes
Total Time 40 minutes

Ingredients
  

  • 500 g nuts I used 200g almonds, 150g walnuts, 150g brazil nuts
  • 1 egg white
  • 25 g light muscovado sugar or brown sugar
  • 2 tsp sea salt flakes or 1 tsp fine sea salt
  • 1 tsp pepper granules
  • 1 tsp chilli flakes I use Aleppo chilli flakes
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp sweet paprika

Method
 

  1. Preheat oven to 150 degrees fan forced
  2. Line a large baking tray with baking paper, and place rack into middle of oven
  3. In a medium sized mixing bowl, whisk the egg white until foamy
  4. Stir in the sugar and spices and mix well
  5. Add the nuts and stir well to thoroughly incorporate
  6. Tip the nut mix onto the lined tray and spread out into a single layer
  7. Bake for 15 minutes, remove tray and stir mix around, then spread out again into a single layer again (they will be a little tacky but will dry out during the next bake)
  8. Return tray to oven and continue to bake for a further 15 minutes, or until nicely golden brown (it takes a total of 30 minutes in my oven)
  9. Allow nuts to cool on tray, where they will harden up and become crunchy
  10. Store in an airtight container in the pantry for up to three weeks
