Raspberry, Lemon and Coconut Friands (nut free)

I just love the delicacy of Friands … small and petite but totally delicious with a gorgeous cup of coffee!  I can even do this for brekkie, which is something I probably shouldn’t admit … but it’s true!

I also love anything to do with berries, and as I always have plenty of egg whites in the freezer this is a great recipe to have “on the go” to use up those egg whites.

Friands generally have almond meal but I used sunflower seeds in this recipe to make them nut free, and added in some coconut for the extra fat and moisture I needed.

You can use whatever berries you prefer, but my preference is for raspberries … they look just right in something as dainty as these.  If using frozen berries, remove them from the freezer 30 minutes before using and place onto a plate lined with kitchen paper.

If you wish to use a microwave to melt your butter beforehand you can certainly do that, but if you don’t have one or wish to use one, then follow the recipe for melting the butter in the Thermomix. The important point here is to just melt the butter and not overheat it where it may separate and look “oily”.  I aim for the butter to be just fluid but still looking gorgeous and creamy. So if using a microwave, melt in small bursts until you achieve that creamy finish.

Friands can be a little sticky to remove from your moulds, so I always grease them well and then use a 2cm wide strip of baking paper that runs across the middle and up each side, so you can pull the overhang to help lift the cooked Friand from the mould without damaging it.

These will keep well for a good three to four days in a sealed container … just dust with a little icing sugar before serving.

If you don’t have any egg whites in the freezer and need to break open eggs to do this recipe, then consider making the Vanilla Bean Dessert Custard with leftover egg yolks (see here) … this would make a delicious accompaniment to the Friands for that little extra special “something”!

Frozen raspberries on kitchen paper 30 minutes before using
Cutting the baking paper into roughly 2cm widths
Greasing the tins well, and lining with strip of baking paper
Sugar, sunflower seeds, spelt flour and lemon rind in ™ bowl before milling into a flour for 10 seconds
Flour put aside in a bowl … I reuse this bowl to put Friand mix in to dispense into molds
Butter ready for melting in ™ bowl
Melted butter which is not overheated so is beautiful and creamy … then set aside …
… egg whites and vanilla placed into ™ bowl …
…. and blended for 30 seconds …
… before flour and coconut added …
… and butter is poured into mix through hole in lid …
… and fully incorporated
Batter placed into a separate container (I reuse the flour bowl) to dispense batter …
… into Friand moulds, raspberries are then placed on top towards the middle …
… and baked until golden …
… Friands allowed to rest for 5 minutes before using a knife to help loosen the sides before lifting the baking paper strips to release …
… and cooled completely before …
… dusting with icing sugar before serving … totally delicious!

Ingredients Method

Ingredients
  

  • 200 g fresh or frozen raspberries allow 4 per Friand

  • 280 g golden caster sugar
  • 100 g sunflower seeds
  • 90 g spelt flour or plain flour
  • Zest of 2 lemons I use a zester

  • 200 g butter room temperature, cubed (or melted ahead if you wish)

  • 220 g egg whites from 6 to 7 eggs
  • 1 tsp vanilla bean paste or extract if preferred

  • 70 g desiccated coconut

Method
 

  1. Grease 12 Friand moulds and line with a 2cm wide strip of baking paper that runs across the middle and up each side with a small overhang
  2. Preheat oven to 180 degrees fan forced, and set rack into middle of the oven.
  3. Place sugar, sunflower seeds, flour and lemon zest into TM bowl and mill 10 seconds / speed 10, put aside
  4. If the butter is not pre-melted, place into TM bowl and melt 2 minutes / 37 / speed 2, scrape around bowl then continue without heat for 1 minute / speed 3 (this will ensure that all the butter is melted without overheating it) … put aside into a small jug (tip: to remove all the butter turbo x 1, then scrape around bowl)
  5. Add egg whites and vanilla to TM bowl and mix 30 seconds / speed 4, scrape down sides of bowl
  6. Return flour mix along with the coconut to TM bowl and lock lid into position without MC in place
  7. Set to 30 seconds / kneading and pour butter steadily into the mix through the MC hole
  8. Scrape around bowl and repeat for a further 10 seconds / kneading to ensure all the butter is incorporated
  9. Pour mixture into a separate bowl (I use the bowl that I had my flour mix in as I find it easier to scoop the mix from there rather than trying to spoon it out from the TM bowl)
  10. Fill the Friand moulds ¾ full (depending on the size of your molds you may get more or less than 11)
  11. Place 4 berries on top of each Friand ensuring they are towards the middle leaving space around the edges (if they are too close to the edge they may stick to the rim during baking making a clean removal a little more difficult)
  12. Bake 20 minutes, turn trays around and bake for another 6 to 8 minutes or until a golden colour and testing skewer comes out clean (it takes 28 minutes in my oven)
  13. Leave in tin for 5 minutes, then use a small sharp knife to insert into the edge of each mould, rotating as you go to loosen the Friand before lifting both ends of baking paper to remove them
  14. Place on a cake rack to cool completely
  15. Keeps very well for a few days in a sealed container (not in the fridge)
  16. Dust with icing sugar before serving

    Is it possible to make these without sunflower seeds? What could be substituted?

      Good morning Lara … yes, you could use almond meal … my kids have nut allergy so I use sunflower seeds or pepitas as a substitute for nut meals … almonds would be perfect xo Gina 🙂

Flourless Chocolate Olive Oil Cake … this is not Flourless Chocolate Olive Oil Cake … this is not a large cake (it’s baked in a 20cm round cake tin), but it is rich, dark and dense and a small slice is just perfect.

Here I have served it with a raspberry coulis as I had some in the fridge, and a dollop of fresh cream. But I have also offered a recipe for a “Coffee Cream” in the post to serve with the cake too.

This version is nut free (I have used toasted sunflower seeds), but you can also use almonds if nuts are not an issue in your home.

Marrakesh Carrots … this is a fabulous dish … Marrakesh Carrots … this is a fabulous dish … it is easy to make, and leftovers keep well in the fridge for up to three days.

I use a Thermomix to chop the carrots (it is quicker than trying to grate them), and I do like the chunky texture that gives me as opposed to “grating” which can sometimes make the carrot a little wet.

The dressing can be blended in a bowl if preferred, and the rest of the salad is prepared by hand so that I get plenty of texture.

This salad goes so well with just about any protein, and is a favourite in our home … with another hot spell fast approaching, this may be one that you would like to try:

Honey Cake – this cake is delicious just on its Honey Cake – this cake is delicious just on its own and does not need icing, but I do try to minimise waste, so when I have little bits of leftover icing from other bakes (in this case Caramel Icing from a Sticky Date Cake I made a month ago, and White Chocolate Icing from the cupcakes I made last week) I put the leftovers into small containers in the freezer … then I can often combine two or three (in this case the two icings I mentioned) which will give me enough for what I need. So last night I took the two icings from the freezer and placed them in the fridge, then this morning I removed them from the fridge and put them on my bench to allow them to come to room temperature, they were then combined and used to dress this cake. It is such a great way to use us icing “scrapes”, and no-one else is the wiser 

Chocolate Buttermilk Cupcakes with White Chocolate Chocolate Buttermilk Cupcakes with White Chocolate Icing … requested for our number 2 son’s birthday today … these are so easy to make, and keep well for a few days at room temperature … but if it is really warm in your home (so that the icing may melt) then I would keep them in the fridge but remove them at least 30 minutes before serving.

To make things super easy for me, I decided to use up some chocolate leftovers from Christmas, so topped the cupcakes with a packet of mini Cherry Ripe’s (one of my favourite), and Nespresso Dark Chocolate tablets (they are super yummy too!) xo
