  • Chocolate and Olive Oil Cookies ... with it being so hot over the next few days I have ditched my plans for making chocolates as gifts and now making chocolate inspired cookies ... these cookies are very easy to make, are gluten free and nut free, can be dairy free based on the chocolate you choose to use (I like using Callebaut cocoa nibs) and there is an option for egg free if that is something to be considered ... love festive baking!   • Gingerbread - gluten free:  I am starting to breathe a sigh of relief!  After deleting my recipe this morning from the website due to brown rice flour issues I encountered yesterday which gave me very poor results (a new batch of flour delivered incredible differences in the final baked gingerbread ... and then tried  it with three different brands), I have now retested the recipe using Macro white rice flour (readily available from Woolies) and I still have to test the recipe using sorghum flour which I’ll do tomorrow ... then I can repost the recipe Tuesday for those that need it ... the challenges of GF baking!!! I obviously still have so much to learn but I’m getting there xo #thepassionatepantry
