Peanut Honey and Chilli Bites

I not only have a sweet tooth, but I also have a savoury tooth!  And when I say savoury I mean anything with spice (chilli)!

Recently I was looking for a little “something” to offer guests before their meal that would not overload them, was easy to prepare, easy to serve, and would compliment our pre lunch drinks.

I had to include nuts because I love nuts, and it is so easy to add a savoury note to them.  I also have gorgeous raw honey that I get direct from Southern Forests (see here) and knew that the combination of peanuts, honey and chilli would be perfect.

So here you are … Peanut Honey and Chilli Bites … perfect for pre-lunch or dinner snack, or for whenever you want a small savoury treat without ruining your next meal (that is if you can stop at one or two!).

These keep really well in the fridge for at least a week, but I suspect they will keep longer if you still need to get through them!

NB:  You can definitely add more chilli flakes if you like, but as they come in different intensities (I have “medium” and “hot” flakes for instance), make these bites as per the recipe the first time with the chilli flakes you have, and adjust up in future if necessary.

All the ingredients in the ™ bowl …
… and blended for 10 seconds
Taste and adjust seasoning and blend again for another 10 seconds
Remove mix to a separate bowl for easier handling, and using a 20ml tablespoon measure …
… roll mixture into balls …
… and turnover in the coconut until well coated
Store in the fridge until …
… ready to serve

Before you start blending have all the ingredients at room temperature ... I keep my nuts in the freezer, and my dried fruit in the fridge, so I take them out 30 minutes before blending to ensure I get an even mix.

These keep really well in the fridge for at least a week, but I suspect they will keep longer if you still need to get through them!

Serves: 20 bites
Ingredients
  • 120g dry roasted peanuts
  • 120g Medjool dates (about 8 or 9), pitted weight, cut in half
  • 200g pure peanut butter (I used Mayver’s brand)
  • 30g raw honey (or whatever honey you have)
  • 1 tsp chilli flakes (or more or less depending on personal taste)
  • 1 tsp sea salt flakes
  • ½ tsp freshly cracked pepper

  • Desiccated coconut for coating
Instructions
  1. Place all the ingredients into TM bowl and blend 10 seconds / speed 7
  2. Scrape around bowl, taste for seasoning and add extra salt and pepper if needed
  3. Blend again 10 seconds / speed 7
  4. Remove mix from TM and place into a separate bowl for easier handling
  5. Using a 20ml tablespoon measure, dip spoon into a small jug of water, then into peanut mix and roll into balls, dampening your hands every now and then to prevent sticking (the wet spoon will assist with removing the mixture from the spoon)
  6. Coat balls in coconut and store in the fridge until ready to serve
  7. Keeps well for at least a week
