Spiced Nuts

I particularly like this recipe as it was inspired by Hugh Fearnley-Whittingstall, who uses an egg white to create the crunch, and not oil which is often used in other recipes.

You can use whatever combination of nuts you like, and also any combination of flavours you like. Here I have used flavours that I incorporate into a Mexican chilli dish that I love.

This nut mix can be served with drinks or as a snack, but it is fantastic sprinkled over salads.

Spiced Nuts

Ingredients Method

Ingredients
  

  • 500 g nuts I used 200g almonds, 150g walnuts, 150g brazil nuts
  • 1 egg white
  • 25 g light muscovado sugar or brown sugar
  • 2 tsp sea salt flakes or 1 tsp fine sea salt
  • 1 tsp pepper granules
  • 1 tsp chilli flakes I use Aleppo chilli flakes
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp sweet paprika

Method
 

  1. Preheat oven to 150 degrees fan forced
  2. Line a large baking tray with baking paper, and place rack into middle of oven
  3. In a medium sized mixing bowl, whisk the egg white until foamy
  4. Stir in the sugar and spices and mix well
  5. Add the nuts and stir well to thoroughly incorporate
  6. Tip the nut mix onto the lined tray and spread out into a single layer
  7. Bake for 15 minutes, remove tray and stir mix around, then spread out again into a single layer again (they will be a little tacky but will dry out during the next bake)
  8. Return tray to oven and continue to bake for a further 15 minutes, or until nicely golden brown (it takes a total of 30 minutes in my oven)
  9. Allow nuts to cool on tray, where they will harden up and become crunchy
  10. Store in an airtight container in the pantry for up to three weeks

    Hey terrific blog! Does running a blog like this take a massive amount work?
    I have very little understanding of programming however I was hoping to start my own blog

      Hi Easy Dessert … thanks so much for liking my blog … to be honest I am still in the “baby stages” and learning all the time … I tried to do this myself (everyone kept telling me it was easy to set up a blog) but found that due to my lack of computer skills it was very difficult. I had my son helping me to start with, but ended up getting a professional to fine tune what we had already done. I honestly feel that unless you have the computer skills to start with, you are best going down that path too. I found someone who charges by the hour and was able to give me a quote of what it would cost to upgrade what we had done, and to get me on the right path … it wasn’t cheap in the end, but so worth it. You also need to have a clear idea of what it is you want the site to look like, as indecision will cost time which then costs money. My site was always going to be about sharing recipes, so that part was easy, it was then defining the categories, etc. So if you do a bit of homework to start with, it will save you time and money later. Apart from that, once everything has been set up for you, the only time you spend it uploading recipes, and for me that is easy. Once I have finalised my recipe, I just “cut and paste” it into the blog, upload the pics, and then “post”. All of that takes me a couple of hours as I keep rechecking everything (I never trust myself!), but that is the only ongoing time really, and also answering any queries that come through, but that does’t take a lot of time. I used Mad Hat Media to help me, and contact details are under the “supplier” section on the website … hope that all helps … and good luck … it is such a joy having your own blog and I am sure you will enjoy it xo Gina

Flourless Chocolate Olive Oil Cake … this is not Flourless Chocolate Olive Oil Cake … this is not a large cake (it’s baked in a 20cm round cake tin), but it is rich, dark and dense and a small slice is just perfect.

Here I have served it with a raspberry coulis as I had some in the fridge, and a dollop of fresh cream. But I have also offered a recipe for a “Coffee Cream” in the post to serve with the cake too.

This version is nut free (I have used toasted sunflower seeds), but you can also use almonds if nuts are not an issue in your home.

The cake is also dairy free, is very quick to make, and gives you eight serves similar to what you see in the post here:

Marrakesh Carrots … this is a fabulous dish … Marrakesh Carrots … this is a fabulous dish … it is easy to make, and leftovers keep well in the fridge for up to three days.

I use a Thermomix to chop the carrots (it is quicker than trying to grate them), and I do like the chunky texture that gives me as opposed to “grating” which can sometimes make the carrot a little wet.

The dressing can be blended in a bowl if preferred, and the rest of the salad is prepared by hand so that I get plenty of texture.

This salad goes so well with just about any protein, and is a favourite in our home … with another hot spell fast approaching, this may be one that you would like to try:

Honey Cake – this cake is delicious just on its Honey Cake – this cake is delicious just on its own and does not need icing, but I do try to minimise waste, so when I have little bits of leftover icing from other bakes (in this case Caramel Icing from a Sticky Date Cake I made a month ago, and White Chocolate Icing from the cupcakes I made last week) I put the leftovers into small containers in the freezer … then I can often combine two or three (in this case the two icings I mentioned) which will give me enough for what I need. So last night I took the two icings from the freezer and placed them in the fridge, then this morning I removed them from the fridge and put them on my bench to allow them to come to room temperature, they were then combined and used to dress this cake. It is such a great way to use us icing “scrapes”, and no-one else is the wiser 

Chocolate Buttermilk Cupcakes with White Chocolate Chocolate Buttermilk Cupcakes with White Chocolate Icing … requested for our number 2 son’s birthday today … these are so easy to make, and keep well for a few days at room temperature … but if it is really warm in your home (so that the icing may melt) then I would keep them in the fridge but remove them at least 30 minutes before serving.

To make things super easy for me, I decided to use up some chocolate leftovers from Christmas, so topped the cupcakes with a packet of mini Cherry Ripe’s (one of my favourite), and Nespresso Dark Chocolate tablets (they are super yummy too!) xo
